Bok Choy and Pineapple Slaw

Ingredients
  • 4 cups thinly sliced baby bok choy (about one pound)
  • 2 cups thinly sliced pineapple
  • 1 cup fresh cilantro leaves
  • 3 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
Directions

Toss all ingredients in medium bowl.  Let stand 15 minutes before serving.
