Confetti Coleslaw

Ingredients
  • 1 small head of green cabbage
  • 1 medium-size beauty heart radish, peeled and grated
  • a small bunch of cilantro, coarsely chopped
  • Apple Cider Vinegar
  • Olive Oil
  • salt and pepper
Directions

Core, halve, and slice the cabbage into thin slices (this can also be done on a mandolin). Add grated radish and cilantro and toss. Combine oil and apple cider vinegar in a 2:1 ratio (oil to vin) and add to the slaw to taste. Salt and pepper to taste as well. Let the slaw sit at least 30 minutes before serving.
