Root Vegetable Fries

Ingredients
  • 1 pound carrots cut into fries
  • 1 pound parsnip cut into fries
  • 1 Tablespoon vegetable oil
  • 1 teaspoon lemon pepper seasoning
  • 1 teaspoon kosher salt
  • 2 beaten eggwhites
  • 1/2 cup panko breadcrums
Directions

Toss the cut carrots and parsnips with the oil, salt and seasoning. Toss with the eggwhites then coat in breadcrumbs. Spread onto 2 bake sheets and bake at 400F until crisp, about 35 mins.
