Tomato and Mozzarella Skewers with Basil Oil

Ingredients
  • cherry (or grape) tomatoes
  • bocconcini ( bite sized mozzarella balls)
  • fresh basil
  • olive oil
  • salt and pepper to taste
Directions

This is basically a caprese salad on a stick. You can substitute bocconcini for regular mozzarella cut into chunks.

On each skewer do a piece of cheese for every 3 tomatoes.

Blend a handful of basil with enough olive oil to make it fluid and creamy. Toss the saucy mixture over the skewers, season with salt and pepper.
