Yogurt Mint Salad Dressing


This can be thinned with olive oil or water for a finer dressing, or left thicker for a fresh veggie dip (particularly good with cucumbers)

  • 1/2 cup yogurt
  • 1 to 2 teaspoons lemon juice
  • 1 clove garlic, minced
  • 1/4 cup mint leaves, finely chopped
  • Sea salt and freshly ground black pepper

Combine all ingredients in a bowl, or use a food processor for a smoother dressing.  Chill before using.
