Bok Choy and Pineapple Slaw
Ingredients
- 4 cups thinly sliced baby bok choy (about one pound)
- 2 cups thinly sliced pineapple
- 1 cup fresh cilantro leaves
- 3 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
Directions
Toss all ingredients in a bowl. Let stand 15 minutes before serving.
